Ingredients:
8 Tomato basil croutons
8 small pieces of soft mozzarella
1tbsp infused olive oil
4 slices of Prosciutto
2tbsp diced Roma tomatoes
2tbsp diced Shallot
1 tsp fresh cilantro
½ tsp chopped garlic
¼ tsp capers
1/8 tsp red pepper flake
1/8 tsp onion powder
1/8 tsp Salt & pepper

Instructions:
In a small ramekin mix together red pepper flake, onion powder, salt and pepper. In a small bowl add diced tomato, shallots, cilantro, garlic, and capers. Sprinkle dry mixture over tomato mixture and toss with a fork. Drizzle infused olive oil onto the mixture folding until completely coated. On a small rack arrange the 8 tomato croutons and brush with infused olive oil then top with mozzarella. Slice prosciutto into long strips. Layer pieces on each crouton, then top with tomato mixture. Preheat oven to 350 degrees. Place croutons into oven until cheese starts to melt. Remove from oven and Enjoy!
