Canna Peach Cobbler

Ingredients 

Peach Base: 

6 medium ripe peaches, sliced and pitted 

2 tablespoons melted coconut oil or melted vegan butter

2 tablespoons of cannabis infused peach syrup (we recommend Mystery Baking Co.)

1/2 cup coconut sugar 

Cobbler Crust  Topping: 

1 cup gluten-free oat flour 

1/2 cup coconut sugar 

1/3 cup finely chopped nuts (walnuts or pecans are best) 

2 teaspoons baking powder 

1 teaspoon cinnamon 

6 tablespoons melted coconut oil or vegan butter 

1/2 cup non-dairy milk 

1 teaspoon vanilla extract

Instructions:

Preheat the oven to 400 degrees. In a 10-12 inch baking skillet, toss the peaches, cannabis peach syrup, oil and sugar all together and mix well, Bake in oven for 15-18 minutes, While the peaches bake, make the cobbler ingredients by mixing together flour, sugar, nuts, baking powder and cinnamon then add in oil, non-dairy milk and vanilla until the dough is formed, Spread the cobbler dough across the skillet and bake for 20-22 minutes or until golden in color. Serve with your favorite vegan ice cream and enjoy with someone special.
